Amazing apple cake

It’s apple season in Sweden. And our neighbours have a graden full of apple trees that they kindly let us scavenge from. So now we have a lot of apples to use up and I’ve been scouring my memory (and the internet) for apple recipes. I’ve already made a lot of apple sauce and I’ve even frozen a bunch of diced apples so that I can make fresh apple sauce throughout the winter. I’ve also tried, tested and refined a few different cake recipes (I know, life is really hard!!!) and I thought I’d share with you the best apple cake recipe so far. This is a delicious way to make sure you don’t waste any scrumptious apples.

Amazing apple cake ingredients
115g butter
150g sugar
2 eggs
1 teaspoon vanilla extract
3 tablespoons raspberry liqueur*
120g plain flour
1 teaspoon baking powder
1/4 teaspoon salt
2 apples, peeled, cored and diced
1 more tablespoon sugar for topping

* I used Chambord because we had some left in our drinks cabinet but you could probably use any kind of fruity liqueur instead or even some dark rum.

Amazing apple cake method
Preheat your oven to 175°c
Line a medium sized cake pan with butter and greaseproof paper
Cream the butter and sugar until fluffy
Stir in the eggs, vanilla and liqueur
Add the flour, baking powder and salt and mix well
Fold in the diced apples and spread the mixture evenly in the cake pan
Top with a tablespoon of sugar
Bake in the middle of the oven for about 35-40 minutes

You can serve it warm with vanilla ice cream or custard. But it’s equally good cold and keeps well in the fridge for a few days.
